To make pesto: combine all pesto ingredients and set aside for flavours to infuse. Meanwhile prepare crostini by grilling the bread slices and rub each with raw garlic clove. Grill Aubergine until cooked through. To assemble, place aubergine slices on top of crostini and top with cranberry pesto. Garnish with a drizzle of olive oil and a fresh basil leaf.
